Learn With Me - Winter Classes 2013

rachel tayse baillieul teacher pictureAfter a hiatus from teaching to work on unpacking at our new home, I am excited to begin offering classes again. This winter I will teach hands-on cooking classes at Franklin Park Conservatory, homesteading discussions at City Folk's Farm Shop, demonstrations at the Clintonville Farmers' Market, and a workshop at the Ohio Ecological Food and Farm Association annual conference. I am also partnering with Joseph of Swainway Urban Farm to offer a season extension workshop at our homestead. One of the reasons I love leading classes is that I learn as much from the participants as I teach. I hope we can share knowledge soon.

Dairy Delights - January 27 3:30 - 5:30 - A whole world of dairy products can emerge from a gallon of milk or bit of cream. Learn how to turn the basics into cheese, yogurt, kefir, butter, and whipped cream at home. The skills learned in this class can help you transform less-than-fresh dairy into something edible, make a recipe ingredient without going to the store, and have more fun in the kitchen.

Citrus Year-Round - February 24 3:30 - 5:30 - Do more with the fruit of Florida - put up the citrus jewels of winter to savor their tart sunny flavor throughout the seasons. We’ll make and taste lemon confit, candied grapefruit, marmalade, and homemade orange liqueur in this cheery class.

Potent Potables - March 24 3:30 - 5:30 - Beer, wine, hard cider, and mead are all within the grasp of the home cook. In this class we’ll taste samples and talk about ingredient sourcing, measurement, and bottling. Then, each participant will make a small batch of cider or mead to ferment at home.

Edible Medicine - January 24 6-8 pm - Not only can food keep our body healthy, it can help support healing. Learn simple, scientifically-based remedies for winter colds, skin ailments, and more.

Fats - February 21 6-8 pm - The variety of cooking fats is enormous. Learn about how to make and use natural and local fats in your home cooking and when to use butter, lard, and oils. We’ll compare the various health factors in using different fats too.

Odds and Ends - March 23 6-8 pm - Great chefs and thrifty home cooks know how to make the most of stems, bones, roots, and other frequently discarded bits of produce and meat. I will show you how I include odds and ends in her everyday cooking and preserving.

Jerky - January 26 - Turn local meats into healthy protein-packed bites by making jerky at home.

Fats - February 23 - Make and sample culinary fats from local sources and learn about the health benefits of using natural fats in your cooking.

Odd Cuts - March 30 - Learn how to cook and preserve unusual (but inexpensive) cuts of meat like flank steak, heart, and offal.

Special Events:

Cooking with Cultures: harnessing the power of yeast and bacteria to ferment foods - OEFFA Conference Sunday February 17 1:30 - 2:30 pm - Fermented foods and beverages like kefir, beer, sauerkraut, vinegar, and pickles are not only nutritious and delicious but can connect the cook with local foods and ancient traditions. In this demonstration workshop, I will show how to start or expand making fermented foods and home and share samples. Included with conference registration.

Hoophouse Build and Season Extension Workshop - March 3 10 am - 2 pm. $25 includes locally-sourced lunch sponsored by City Folk's Farm Shop. Register at City Folk's Farm Shop 4760 N High St., by calling 614-946-5553 or emailing shopkeeper Shawn.

Join Joseph Swain of Swainway Urban Farm and the Tayse Baillieul family for a hands-on season extension workshop and hoophouse build. With the addition of a simple hoophouse which can cost around $300, home gardeners in Central Ohio can extend the growing season from early spring to late fall and right on through the winter months. A hoophouse can also provide a warm space to harden seedlings and get a jump on summer crops. In this session participants will construct a hoophouse while learning best practices on growing food for themselves year round. Hoophouse hardware and supplies will be available for purchase at City Folks Farm Store. The workshop will take place at our homestead in north central Columbus.

Homesteader Rachel Tayse Baillieul will guide class participants to make freezer basil pesto, water-bath canned applesauce, "sun" dried tomatoes and home frozen fruit. Fermented Foods Fermented foods, like traditional sauerkraut and kefir, are believed to improve digestion and increase absorption of nutrients. Plus, they taste delicious! We will sample a variety of fermented foods and demonstrate how to easily make kefir, buttermilk, sourdough, pickles, and sauerkraut at home. Sun., October 16, 4 – 6pm $30 Members; $35 Non-members

Whole Bird Cooking Fear the holiday turkey and goose no more! Participants in this class will practice carving, eat a small meal, hear tips and tricks for flavorful juicy roasting, and learn how to use leftovers to best effect. Fruit or Vegetable? PreK Using the powers of observation, preschoolers will identify what is a fruit and what is a vegetable, explore the gardens to see crops growing on trees, vines, and plants and then cook and taste nutritious recipes with local and seasonal produce. Harvest Fun PreK The harvest season is full of kid-friendly foods and activities. Kids will cook with local favorites including apples, potatoes and pumpkins during this series. Each week series will include a food-related craft. Whole Grains PreK Kids will explore nutrient-dense grains, from familiar rice and wheat to exotic tabouli and quinoa, through measuring, cooking and tasting a wide variety of grains. Apples Year Round Rachel will share her favorite ways to enjoy apples in all seasons by dehydrating, canning applesauce, and storing long term. We'll focus on more advanced ways of preserving apples including making cider vinegar and hard cider. Tuesday September 20, 6:30-8:30 pm, $30 per individual, $55/pair (one person takes two classes or two people take one class)

Home Charcuterie Learn how to make pancetta and bacon at home with no special tools or equipment! We'll also demonstrate how to stuff sausage and sample a variety of home cured meats. Tuesday October 18, 6:30-8:30 pm, $30 per individual, $55/pair (one person takes two classes or two people take one class)

Hounds in the Kitchen appearances: Bacon Camp 2011! Rachel will be part of the judging team for the annual bacon camp hosted by Wild Goose Creative at the North Market. There are still tickets available for next Saturday's event. August 27, 1-4 pm, $10 for bacon samples and fun. Register online.

Country Living Fair Held on the beautiful Ohio Village, the Country Living Fair is an annual gathering of fans of antiques, farm fresh cooking, and crafting. Rachel will present "New Ideas with Ohio Apples" on Friday at noon. The fair runs 10 am to 5 pm Friday, Saturday, and Sunday September 16-18. Tickets are for sale online ($13) or at the gate ($16).

Hungry Planet at Franklin Park Conservatory - August 20 - November 6 The conservatory hosts a food show this harvest season. See food art installed throughout the horticultural displays, tour the Edible Campus, and wander through a blown glass garden. A Food for Thought lecture series and special events like Market Days and Food Truck Sundays compliment the exhibits.

Lobster Days at The Hills Market Join The Hills Market in Worthington as they serve traditional Maine Lobster Rolls (filled to the brim with 1/4 pound of fresh lobster placed atop a buttered and toasted roll) with Ballreich's potato chips (from Tiffin, Ohio), lemonade and a slice of Judy's blueberry pie (from Waldo, Ohio.) Seatings are at 1 and 5 p.m. August 27 and September 3. Reservations for the $15 dinner are required by calling 614.846.3220.

Farm to Table Dinners at Murphin Ridge Murphin Ridge in West Union, Ohio will offer two different opportunities for travelers to enjoy the inn's memorable farm-to-table dining experience, with dinners slated for Sat., Sept. 3 at 7 p.m. and Sat., Oct. 1 at 7 p.m.  The dinner is only $50 per person or $65 for wine pairings. Lodging is also available.

Horn of Africa Benefit at Solay Bistro> The Horn of Africa benefit dinner at Solay Bistro promises to be one of the most interesting cultural exchanges in Columbus this fall, and a delicious one to boot. Solay Bistro will prepare a African foods buffet on September 7 and 14th to raise funds for starving Africans, many of whom have relatives living here in Columbus. Tickets cost just $35 each and proceeds will go to CARE, a highly regarded non-profit doing work in the Horn of Africa.

Taste the Future - Columbus State Community College The 23rd annual culinary showcase, Taste the Future, will be held on September 13, 2011. More than 50 chefs will prepare samples for guests to enjoy on the Columbus State campus. All proceeds benefit student scholarship. Be sure to read Hounds in the Kitchen this Monday for a ticket giveaway!

Kids World at Independents Day - Saturday, September 17 10am - 8 pm at Gay Street and Pearl Alley Kids World will be a special area for children up to the age of 13 along the Gay Street sidewalk between Sugardaddy's and Pearl Alley during the Independents Day celebration. Openheartcreatures will perform in body puppets, the Cooking Caravan will put on a performance and pass out food samples, there will be a kids fashion design/creation hour and fashion show, and an art station where they can make music shakers and bird feeders. The SBB will host a "Start Your Own Business" seminar for kids with ideas of how they can get involved with the community through entrepreneurship, and then will run a kids parade through the fest to show people that children are our next community leaders.

North Market's 6th Annual Microbrew Festival The North Market will toast the end of summer with the 6th annual Columbus Microbrew Festival on September 16 and 17. Celebrate locally brewed ales, lagers and stouts in the company of the brewmasters from participating local microbreweries. Admission free; beer tasting is $20.

Farm to Table Dinners at Jorgensen Farms After an informal tour of Val's organic herb and lamb farm in Westerville, guests will enjoy a chef-prepared meal of seasonal ingredients every third Sunday through December. Dinners start at 5 pm and cost $40 per person.

Local Foods Week - locations across Columbus, presented by Local Matters From a movie night to local drink tastings to the harvest ball, September 30 - October 8 will be a celebration of all things local. Events for are scheduled for foodies of all ages. Stay tuned to Eat Local Ohio for details and registration.

Farmer's Markets The Clintonville and North Market farmer's markets begin this weekend, April 30. I defer to the very thorough list of markets on Columbus Underground for details about the many (yay!) other markets around the city.

Cook and Learn with Rachel I will speak about knowing your food at Pecha Kucha Columbus Vol 17. Held on May 12 at Eartha Limited from 7-9 pm, I will join a handful of other presenters to show twenty slides and talk for twenty seconds about each. Truthfully, I'm out of my mind nervous to talk in front of the hundreds of people likely to show up. Come and support me, please? There's free beer for your $2 donation...

Two of my May cooking classes at Franklin Park are already full. Sign up soon for the preschool Eggs class and look ahead to June's Honey and Berries if you don't want to be left out.

Food and Dining Tomorrow night, Thursday April 28, is the Capital Area Humane Society Celebrity Chef event. I will be there to chat up chefs and support one of my favorite charities! Tickets are available at the door for $60.

May 1 marks the first First Sunday at Jorgensen Farm. Each month will feature a farm market and farming activity suitable for families.

Saturday May 7 is the Spring 2011 Market to Market Ride including Columbus Crave at the Hills Market.

Slow Food Columbus is hosting a potluck on Mother's Day, May 8, at Pleasantview Farm. Visit their events page for details.

On May 12, sadly opposite Pecha Kucha, Taste of Dine Originals hosts their annual chef's tasting event at Grange Audubon Society.

Columbus Food Adventures premieres their Gluten Free Dessert Tour on May 14. On May 24 they will give a tour of historic restaurants, details TBA.

Greens (ages 3-5) Winter greens are so sweet and tasty that even veggie-averse kids will be tempted to taste the green monster smoothie, kale chips, and pesto we cook up in this vitamin rich class. Thursday, March 10, 11 a.m. - 12 p.m. $15 Members; $20 Non-Members

Charcuterie Charcuterie is the act of curing meat by salt, smoke, or dehydration.  Home cooks will learn how to apply these concepts to their cooking to delicious effect.  Participants will enjoy a light meal featuring cured meat and stuff sausage to take home.  Tuesday March 15, 6:30 - 8 p.m. $30 Members; $35 Non-members

Growing Young Chefs from the Ground Up! (For children entering grades 1 - 6) Spend Spring Break cooking and eating at Franklin Park!  We will discover all the different parts of plants that we eat, from roots in the ground to fruit hanging from branches.  Young chefs will help set the menu and cook tasty snacks and lunches, visiting bees and edible gardens along the way. Seeds to Grow and Eat! Seeds, the starting germ of a plant, can be eaten, sown, or sprouted.  We will explore all three options in this family workshop.  We will cook three snacks from seeds and create an indoor herb garden to take home. Condiments Condiments can be made at home as easily as opening a jar from the store. Participants will practice making mayonnaise, aioli, ketchup, mustard, and barbecue sauce. After creating the toppings, we will taste them on sandwiches. Sunday April 3, 4 - 5:30 p.m. $30 Members; $35 Non-members

Butterflies Did you know that all it takes to make butter is to shake up some cream? We’ll make butter from local Snowville cream and use the buttermilk to whip up whole grain pancakes with seasonal fruit. Ohio Market Day at Hills Market - Saturday, March 12 from 10 a.m. to 2 p.m. This free community event showcases the wares of thirty food purveyors and organizations from around Ohio. Each of our Ohio vendors will demo their wares. We'll be hosting several workshops featuring recipes and accompanying samples. As always, Boar's Head will be giving away free hot dogs from 11 a.m. to 1 p.m. and we will raffle off more than 100 prizes and giveaways.

Central Ohio Food Forum at Wild Goose Creative - Monday, March 21st from 6:30-8pm Join Edible Columbus, Local Matters, and Wayward Seed Farm for a series of open and honest conversations about our food system. With topics ranging from production to distribution, community gardens to backyard chickens, and everything in between, we invite you to join us. Did you know there is a hidden star in every apple?  Children will learn where the star lies and three distinct ways to enjoy local autumn apples in this class for 4 to 8 year olds.  Participants will practice peeling, measuring and mixing while making fresh apple slaw, apple stuffed squash and apple upside down cake.  Register online or call 614-463-9664.

In this class Alex and I will discuss and share fresh and cured meats.  Then, the group will grind, mix, and stuff three types of sausage from local meats.  Participants take home 2 pounds!  Email me to register for limited spots.

Kids Cook Pounds of Pumpkins Thurs. October 14 4:30 –6 pm North Market Dispatch Kitchen. $25

4-8 year olds will puree, pound, and pierce while creating roasted pumpkin soup, spiced pumpkin muffins, and pint-sized pumpkin pies. Register online or call 614-463-9664.
