Meal Plan April 26, 2010

Mindful MenusDo you ever play restaurant with your kids?  It's a fantastic way to enjoy an evening together and gently guide their experiences about food, service, and community.  I wrote about our most recent restaurant at home on Ohio Moms Blog. This week's menu:

Monday - macaroni and cheese, spinach salad

Tuesday - roasted chicken, baked kale, baked potatoes

Wednesday - (real) restaurant dinner with family (I'm voting for Lavash or Aladdin's)

Thursday - overnight stay at the Inn at Cedar Falls, sandwiches on the way there for dinner

Friday - breakfast and lunch from the Inn, frozen ravioli for quick after-drive-home meal

Saturday - buffalo burgers, fruit, quinoa and feta salad

Sunday - family dinner

Meal Plan April 19, 2010

Mindful MenusWe made it through the week without Alex! Even if I did have horrible allergies... Do you check the weather like I do when meal planning? I like to cook warm foods when it's cold and make use of the grill when warm weather is forecast.

Monday: Lil - chicken and pasta, Rachel and Alex - $1 grilled cheese dinner at Bodega while Lil is at swimming lessons (Thanks for taking her, Mom!!)

Tuesday: Veggie fried rice and tofu

Wednesday: Pulled pork, polenta, spinach salad, Rachel - snack during SYC auction committee meeting at Northstar

Thursday: Earth Day Celebration demonstration, 4:30 pm Franklin Park, potluck dinner with friends or eat at celebration

Friday: Homemade pizzas

Saturday: OSU spring football game!! Grill fish, tofu, veggies for dinner

Sunday: Family dinner

Meal Plan April 12, 2010

Mindful MenusAlex is traveling for business this week to Connecticut and New Hampshire. I have three workshops scheduled (Food Matters Columbus event Monday, Kids Cook Thursday, and Container Planting Workshop Saturday) AND I will be helping staff the Sprout Soup store while the owners are on vacation. With all the busy-ness, Lil and I will surely have hungry tummies. I will rely on pantry items and frozen homemade food to get us through the week. Monday - chicken leftovers for Lil, homemade bean cheese empanada from the freezer for me, applesauce, carrot sticks Tuesday - penne with home canned tomato sauce and Parmesan Wednesday - sandwiches, lentil soup from freezer Thursday - dinner at friends Friday - homemade pizzas and salad Saturday - restaurant Sunday - family dinner

Meal Plan April 5, 2010

Mindful MenusWe didn't meal plan last week and boy did I miss it.  It feels a little unsettling to not know what we're having for dinner and need to run to the store all the time.  This week, though a day late, we are sticking to a plan: Monday - leftovers for Lil, happy hour at Rigsby's kitchen for Rachel and Alex (they have $1 oysters on Mondays)

Tuesday - grill hot dogs, potato chips, green salad

Wednesday - Roasted chicken, cauliflower gratin, roasted sweet potatos

Thursday - dinner with friends

Friday - Fish, twice baked spinach feta stuffed potatoes, applesauce

Saturday - Fresh pig (more on the provenance of said pig later this week) for a canoe trip planning potluck

Sunday - Family dinner

Menu Planning on Vacation

Mindful MenusUsually I would post our week's meal plan today.  Because we are leaving for a vacation to the Eastern shore of Virginia tomorrow, I have no mindful menu. That doesn't mean I'm not planning, though!

Eating on vacation, especially a driving vacation like ours, can be a string of fast food restaurants.  The salt and fat in fast food does nothing to keep us healthy and enjoying a trip.

Besides, America has more to offer than a quick eat on the road.  There are family restaurants and local specialty food stands all over the country.  With mobile smart phones and time in our itinerary, we do our best to explore good eats on road trips.

I use google maps to estimate where we will want a meal.  Then I use the 'search nearby' function to look for restaurants.  If I find nothing of interest, I check out recommendations on happy cow (a vegan/vegetarian site), urban spoon or yelp.  I often narrow the search by the term vegetarian or kid friendly.

We make lots of snacks so as to not be tempted by gas station buys in between meals.  For this trip we are bringing homemade chex-like mix, apples, dried cranberries, lara bars, crackers, and carrot muffins to ease highway munchies.

Whenever possible, we select lodging that has a cook top and/or refrigerator.  We can cook breakfast in the room, store cheese and fruit for snacks, and make simple dinners with ingredients from the farmer's or fish market.

When we get to our final destination of Chincoteague Island, we are staying at  Eagle's View Bayfront House vacation rental.  The owner saw a link to this blog in my email signature and offered a round up of healthy local restaurants and food markets.  When traveling, vacation home owners and blogs are great resources for food lovers.

Meal Plan March 14, 2010

Mindful MenusAs I anticipated, I am exhausted after last week's activities.  This week will be at a slower pace and next week we're going on vacation! Monday - homemade mac and cheese lunch for two blogger friends coming to visit the chickens; swordfish, broccoli, and risotto for dinner

Tuesday - homemade pizza followed by a meeting of the School for Young Children committee (Alex and I are chairs)

Wednesday - not a St. Patrick's Day menu - falafel (homemade from the freezer), roasted red potatoes, spinach salad

Thursday - 'Brinner' (breakfast for dinner) with my family celebrating my sister's partner's birthday.

Friday - teriyaki chicken, rice, steamed edamame, and Trader Joe's vegetarian potstickers (these have been rattling around the freezer for ages)

Saturday - 12 - 1:30 PM EGGstravaganza at Sprout Soup; clean out the fridge leftover dinner

Sunday - family dinner

Monday - leaving bright and early for a week of relaxation and exploration on the mid east coast including Washington DC and Chincoteague Island, Maryland.  Yippee!!

Meal Plan March 8, 2010

Mindful MenusWe have so many plans this week that I am feeling exhausted just thinking about it!  Our jack of all trades friend Krash is coming early tomorrow morning to install our wood burning stove, staying through Tuesday if necessary.  Tuesday night I'm going to an orientation meeting for the FLOW rain barrel program. The end of the week will be occupied with preparations for the School for Young Children scholarship benefit auction.  I am in charge of organizing the donation information before and during the event; Alex and I will both volunteer at Saturday's event.

I wouldn't be surprised if a restaurant meal or two substitutes for some home cooking this week, but here are our good intentions:

Monday - homemade pizza, spinach salad and HAPPY BIRTHDAY brother in law Ben!

Tuesday - spinach feta pie, applesauce

Wednesday - chicken from Frijolito Farms, roasted red potatos from Carousel WaterGardens Farm, and the last of our homegrown golden nugget squash.

Thursday - macaroni and cheese, green beans

Friday - swordfish, risotto with peas

Saturday - sandwiches or quesadillas followed by snacks at the SYC auction

Sunday - family dinner

Meal Plan March 1, 2010

Mindful MenusIs it really March?  Does that mean the snow might melt off sometime??  There are only twenty days until spring and I am itching for the seasons to change. Monday - Loaded baked sweet potatoes

Tuesday - dinner at Columbus Home & Garden Show or nachos at home

Wednesday - spaghetti and meatballs (bison!  from the Columbus Winter Farmer's Market!) with Alex's family

Thursday - chili corn pie and salad with friends

Friday - fish en papillote, rice, wilted spinach

Saturday - leftovers

Sunday - dinner with Alex's family
