Meal Plan August 2, 2010

Mindful MenusWow, is it really August?!  We missed meal planning last week and it definitely made dinner time more hectic.  This week will be better because I can look forward to some yummy meals. Monday - new potato hash with poached eggs, chopped tomato, and bacon  100% homegrown/raised/cured!

Tuesday - homemade pizza and applesauce, then Rachel goes to first beekeeping class!

Wednesday - family dinner - grilled chicken, something with kale

Thursday - potluck with Japanese students and host families - I think we'll bring a salad of homegrown Cherokee tomatoes and basil

Friday - visit Uncle Mike and Aunt Liz in Painesville OH (Mike will make us good food served with lots of wine.  Yay!)

Saturday - still in Painesville OH

Meal Plan July 18, 2010

Mindful MenusWe are home from an exhausting, challenging, beautiful Canada canoe trip.  I am processing nearly one thousand photographs and a multitude of emotions while settling into our everyday routine.  The garden greeted us with ripening fruits and vegetables, many of which are featured in this week's dinners. Monday - Braised goat ribs from Stratford Ecological Center, mashed sweet and homegrown cranberry red potatos, homegrown Parisian picking cucumber and Clint Eastwood tomato salad.

Tuesday - Pan fried ricotta gnocchi (Steamy Kitchen's recipe) with homegrown tomatoes and basil

Wednesday - Rachel volunteering and eating with Ohio 4-H/Labo international program, Alex and Lil make chicken, rice, and garden salad

Thursday - Rachel volunteering and eating with Ohio 4-H/Labo international program, Alex and Lil make spaghetti and sausage

Friday - Homemade pizza

Saturday - All day birthday surprise for Alex!  I told him where we are going and he already forgot.  We're perfect for each other, seeing as how I can't keep a secret and he can't remember plans!

Sunday - family birthday dinner for sister Megan & Alex: Grilled Red ribs, chicken wings, and brats, Ohio sweet corn, potato packets, green beans

Meal Plan: 19 People 6 Days in Backcountry Canada

We are traveling in Canada right now.  I scheduled this blog post and have several scheduled guest bloggers for the time we're away.  Enjoy! As is often the case when planning an event, the people who care the most about a particular element are the ones who invest in planning that element.  In the case of our Canada trip, I care about food and therefore helped with menu planning, shopping, and packaging of foodstuffs.

The challenge is to feed nineteen people ages four - 63 for six days.  There is no refrigeration available and dry ice will likely only last two days.  All food must be carried over several long portages, therefore weight should be minimized. Food also has to be hung in bear trees overnight, no small feat, so we aimed for reduced bulk.  Fuel and stoves are at a premium, so low cooking items are preferred.

The Menu

Saturday: arriving in South River from a day of driving, camp at outfitters

Dinner at outfitters - brats, beans, green salad, and potato chips

Sunday: paddle all day, camp on North Tea lake

Breakfast - choice of oatmeal, cereal, or granola

Lunch - cold cut sandwiches, side (choose among pretzels, goldfish crackers, animal crackers, dried fruit, granola bars)

Dinner - chicken veggie stew OR penne and meatballs

Monday: paddle all day, camp on Biggar Lake

Breakfast - choice of oatmeal, cereal, or granola

Lunch -tuna salad or salmon with crackers and side (choices above)

Dinner - meat on a stick + veggie soup with dumplings OR bean and cheese burritos

Tuesday: Chill on Biggar

Breakfast - pancakes and bacon

Lunch - quesadillas/refried bean and cheese wraps and side (choices above)

Dinner - meatless chili OR cheese tortellini

Wednesday: Chill on Biggar

Breakfast - choice of oatmeal, cereal, or granola

Lunch - hummus, tabouli, pita chips and side (choices above)

Dinner - Soba noodles with peas, tuna, and peanuts

Thursday: Paddle all day, camp on North Tea

Breakfast - choice of oatmeal, cereal, or granola

Lunch -peanut butter and jelly english muffins and side (choices above)

Dinner - quinoa and madras lentils OR rice and beans

Friday: Paddle to outfitters

Breakfast - choice of oatmeal, cereal, or granola

Lunch - leftovers or couscous and veggies

Dinner - first restaurant we can find, hopefully one with poutine, that wonderful Canadian creation of french fries, gravy, and cheese curds

The Package and Poundage

Each dinner is packaged in a ziploc bag with written instructions so that any canoer can prepare the meal.  Breakfasts and lunches are serve yourself, also packaged in water tight containers.

Meal bags and containers are packed according to campsite, as the group is split into two sites and will have two cooking areas.   There are five group food bags, each weighing approximately thirty pounds.

Each person is also bringing one to three pounds of personal snacks and food items.  My snack bag contains Jerquee meatless jerky, home dried Charlie's apples, chocolate, and nuts.  The plan is that each of these snack bags will be combined into a larger stuff sack for nighttime tree hanging.

The Price

The food budget was set at $30 per person, or $570 total.  As all receipts haven't been entered, the actual spent total isn't calculated yet, but I approximate it to will be more along the lines of $650.

The toll to our personal health has yet to be determined.  There aren't a lot of vegetables on that menu, nor rich proteins.   It's a diet we all can survive on for a week, for sure, but I'm sure we will all miss fresh foods by the end.  Undoubtedly I will report back how the back country meal plans worked out.

Mindful MenusWe leave for our Canadian back country vacation in less than two weeks!! This week's quick meals clear out the pantry and allow time for packing and planning plus lots of socializing. Mindful MenusProduce from our garden is finally maturing for more regular harvests.  This week's menu uses some fresh produce and some of last year's canned goods. Monday - stuffed baked potatoes with garden green salad

Tuesday - dinner with Alex's parents - maybe chicken kabobs, lentils, rice, wilted kale

Wednesday - rotini pasta bake (home grown greens and herbs, home canned tomatoes) with mozzarella

Thursday - sweet pea risotto (home made stock, pick-your-own shell peas)

Friday - tofu pad thai with garden green beans

Saturday - Rachel goes to WordCamp during the day; Birthdays/Father's Day dinner, campfire, and camping at my aunt's horse farm

Sunday - Rachel and Alex cook backyard chicken eggs, home cured bacon, and homemade bread for breakfast; Father's Day feast for Alex and his father at our house.  Lil wants the menu to be a surprise so you'll have to wait until next week!

Mindful MenusLast week was INSANE!!  This week we have almost no plans other than Alex is in Arizona Monday - Wednesday. Monday - spaghetti with asparagus (leftovers from Asparafest deviled egg testing) and mustard greens

Tuesday - aseptic quinoa rice mix and lentils (testing for Canada backcountry canoe trip)

Wednesday - baked potato stuffed with greens, radish salad

Thursday - lasagna with homemade ricotta, tomato sauce and greens

Friday - grilled fish, tofu, asparagus (more leftovers), and rice followed by OEFFA sponsored talk: HOME-SCALE ECOLOGICAL FOOD PRODUCTION WITH DAVE JACKE, 7-9 p.m.,  Clinton Heights Church 15 Clinton Heights Ave., Columbus, Ohio  Join me!

Mindful MenusWe skipped a few weeks of meal planning recently and our diet has been lacking.  We're hopping back on the bandwagon this week, an especially busy one. Monday - Memorial Day - sandwiches and fruit for picnic lunch at Hoover Dam with family, leftover chicken, rice, and coleslaw for dinner

Tuesday - grill sausages, tofu, potato packet, home canned applesauce

Wednesday - Homemade bread and butter for Rachel to take to  Open Heart Art summer camp orientation, fish, rice, carrot sticks for Alex and Lil

Thursday - Rachel eating dinner with Chef Druck, Alex on his own, Lil eat pasta with babysitter

Friday - Sushi Ting Restaurant

Saturday - Mint tea and homemade snacks to be determined for our Homestead Open House (11 - 1, you're coming, right?), lasagna with greens for dinner

Mindful MenusWho else is celebrating Cinco De Mayo this week?  We love any excuse for food centric celebrations, so we're cooking up a Mexican inspired menu on Wednesday to share with family.  I would love to hear what other people are planning. Monday - chicken and rice (Lil's pick), grapefruit

Tuesday - buffalo burgers, mashed potatoes, salad with Alex's parents

Wednesday - Pork carnitas, rice, beans, homemade corn tortillas (my first attempt, any tips?), spinach salad, margaritas, Tecate beer.
